Lentil Salad

Ingredients
2 cups of cooked brown (green) lentils1 cup of chopped parsley2 tbsp. chopped chives1 tvsp. very finely chopped or grated onion3 tbsp. balsamic vinegar2 tbsp. olive oil from the very bestSalt and Pepper to taste
Directions
Soak the lentils for a few hours to reduce cooking time.

It is important that the vinegar is added to the lentils whilst they are still hot.
Add all other ingredients and serve.
This salad is best when eaten still a bit warm.
