Creamy Roasted Red Pepper Chicken

1 Clove garlic (minced)1/4 cup red onion (chopped)3/4 cup roasted red peppers (chopped)2 ounces of light cream cheese2 TBSP olive oil3 TBSP red wine vinegar4-6 drops of hot sauce1 tsp Basil1 tsp Oregano1 tsp ground black pepper4 Chicken breasts, split and butterfly (optional, wrapped in rinsed and dried spinach)
Put red onion, garlic and roasted red pepper in saucepan with oil & vinegar simmer uncovered and stir occasionally for 5 minutes.
Add remainder of ingredients (minus chicken) and continue to simmer until cream cheese is blended in and sauce is uniform consistency. Let simmer while you prepare the chicken.
Spray or lightly coat in Olive Oil an oven proof dish, Take split chicken breasts and lay open in dish then cover with sauce and place in oven on center rack.
Cook at 325-350 until Chicken is cooked completely, serve with rice.
