1/4 C. vinegar 1/3 C. sugar 1 Tbs. tomato paste 2 Tbs. soy sauce 2/3 C. pineapple juice 1 1/4 C. water 1 onion, quartered 1 green pepper, cut into squares 1 C. crushed pineapple 1 Tbs. cornstarch 4 tomatoes, quartered salt pepper 4 chicken pieces, cooked
Preheat the oven to 400 degrees. Mix the vinegar, sugar, tomato paste, soy sauce, pineapple juice and 1 C. of water in a pan. Add the onion, pepper and pineapple and bring to a boil. Mix the cornstarch with the rest of the water and add to the pan. Boil, stirring for 1 minute to thicken. Add the tomatoes and season. Pour the sauce over the chicken and heat through in the oven for 20 minutes.
