chicken salad croissants

Ingredients
1# cooked chicken2 celery ribs, diced2 small carrots, shredded1 c. mayo1/3 c. finely chopped oniondash salt and pepper2 packages (2 1/4 oz. each) sliced almonds8 croissants, split
Directions
in large bowl, combine the chicken, celery, carrots, mayo, onion, sal and pepper. Cover and refrigerate for atleast 2 hours (I also have put it in freezer until chilled). Just before serving, stir in almonds. Serve on croissants. YIELD: 8 servings Can also make with one pound of cooked small shrimp (note nutritional value wil change with shrimp)
