Pepper, Onion Beef Sausage Stir Fry with Brown Rice

Ingredients
Organic Yellow bell pepper, slicedOrganic Red bell pepper, slicedOnion, choppedLeek, choppedBeef sausages, cut into rounds (marc-angelo brand)Whole grain brown riceItalian seasoningSaltPepperGarlic powderTomato sauce
Directions
Cut beef sausages into rounds and cook in a hot pan for about 4-5 minutes on each side.

While sausage is cooking, chop onions, leek and garlic if you have (I used powder since I didn't have any on hand).

Slice yellow and red bell peppers length wise. Chop tomatoes as well.

Drain excess fat from sausages. Add onions, leeks and garlic and cook for 7 minutes until onions are translucent.

Add bell peppers, tomato sauce and tomatoes to beef mixture. Add italian seasoning, salt and pepper and stir. Cover and cook for at least 15 minutes. The longer it cooks the better it tastes as all the ingredients get a chance to melt into eachother :)

Cook rice according to directions on box. Typically 1 cup of water and 1 cup of rice. Bring water to a boil and add rice and cook 5 minutes on low covered (as long as using minute rice)

Top with cheese if you like and serve !with brown rice or pasta for non brown rice eaters. Enjoy!
