4 medium red skin potato quartered2 T olive oil1/2 t Italian Seasoning blend
Preheat oven to 350 degrees. Scrub and quarter red skin potatoes. In a 9X9 Baking Dish combine potatoes, olive oil and Italian Seasoning. Arrange potatoes in dish with one cut side down, cover with aluminum foil. Place dish in oven for twenty minutes. Remove foil, return to oven and roast for 15 minutes more. Turn potatoes to have other cut side down for an additional 15 minutes in the oven. Remove and serve.
