olive oil3 rashers of quality smoked streaky bacon, roughly chopped2 fresh bay leaves2 sprigs of fresh rosemary1 whole rabbit, skinned (ask your butcher to do this for you), including offal1 bulb of garlic (left whole), white skin peeled away2 leeks, washed, topped and tailed2 carrots, washed, topped and tailed2 sticks of celery, washed and trimmed2 red onions, skin on, washed20g dried porcini mushrooms2 x 400g tins of chopped tomatoes1 x 500ml can of light smooth beer/ale2 tablespoons tomato puréesea salt and ground pepper1 whole nutmeg, for grating1⁄2 lemona few sprigs of fresh thyme
