Ingredients
rice noodleschili saucesoy saucefish saucelimescanola oilgarlicgingermustard greensbell peppershredded carrotsscallionseggsbean sproutscilantro
Directions
prepare noodles per instructions on box. set aside. in a bowl combine chili sauce, soy sauce, fish sauce and juice from the limes. heat 1.5 tablespoons of oil in skillet, add garlic and ginger: saute' about 30 seconds. Add greens and cover for 2 minutes till wilted. Add peppers, carrots and green onions: stir fry 4 minutes and remove to a bowl. add remaining oil and scramble eggs till cooked, add into the bowl with vegetables. add chili mix into the skillet and heat till simmering and add noodles. move noodles around gently till coated. add vegetables with the eggs and bean sprouts to pan and heat through. transfer to bowls and top with cilantro. enjoy
