Bacon Wrapped Tilapia

Ingredients
Three tilapia filets 1/4 cup thinly sliced (or diced) Vidalia sweet onion1/2 cup stewed tomatoes w/ juice (Hunts-Italian seasoned)1/8 cup margarine1.5 oz. white wine (chardonnay works well)1 tsp minced garlic9 medium slices bacon (for a lower fat option, try turkey bacon--although it gets brittle very easily and may not work as well here)2 tbsp fish & poultry seasoning1 tbsp chopped basil (fresh or dried)
Directions
Start by popping 9 medium slices of bacon in the microwave, set for 4-5 minutes (depending on your microwave) - goal is to cook them halfway so they are still wiggly and can wrap around your filets that will go in the pan later.

While your bacon is nuking, place margarine, wine, thinly sliced/diced onions and minced garlic in a medium sized pan over medium heat. Stir occassionally for appx 4-5 minutes. Simmer until the liquid is reduced to about half and your onions are soft and slightly transparent.

While your sauce is simmering, rub each of your tilapia filets with the fish & poultry seasoning, and the chopped basil (dried basil is less expensive and works great in this recipe). Wrap three pieces of half-cooked bacon around each filet, and secure with toothpicks.

Place filets on top of sauce in your pan, cover and cook on medium-low for an additional 4-5 minutes, or when the fish flakes easily with a fork.

Scoop the sauce on top of each filet and serve. VOILA! A fast, easy and very healthy dinner. The bacon can be extravagant, but only adds about 100 calories to each serving, and makes for a delectably flavored alternative to your ordinary fish dish. Awesome choice for low carb dieters and the fish-weary!

    My rating is three stars. All of the ingredients were not mentioned in the actual cooking process. To be more specific; the Italian Stewed Tomatoes were part of the ingredients but not of the actual cooking. The cooking of the bacon wrapped fish on top of the stove should be followed by broiling 5mi - 1/19/10

    Tried this with Canadian bacon and it was amazing, despite not being able to fully wrap the bacon around the tilapia. The extra sweetness of the Canadian Bacon was a surprise treat and played well with the Tilapia. - 1/5/10
