Mushrooms with Swiss Chard and Spinach

Ingredients
Swiss Chard, 4 cup, chopped (remove)Spinach, frozen, 1 package (10 oz) yields (remove)Garlic, 3 clove (remove)Leeks, 1 leek (remove)Ginger Root, 0.25 cup slices (1" dia) (remove)Pineapple, fresh, 0.5 cup, diced (remove)Lime Juice, 1 lime yields (remove)Dill weed, fresh, 1 cup sprigs (remove)Parsley, dried, 2 tbsp (remove)Olive Oil, 1.5 tbsp (remove)Red Wine, 1 glass (3.5 fl oz) (remove)Mushrooms, canned, 1.5 cup (remove)Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove)*Soy Sauce, 1 tsp (remove)
Directions
Heat the oil in a large pan and add the chopped garlic, ginger and leeks. Let it cook for a minute stirring occasionally. Add the pepper half way and cook until softened. Pour in the drained mushroom slices and add the lime juice, soy sauce, red wine. Cover and let it cook on medium heat for about 5 minutes. Add the chopped and de-stemmed chard and the spinach. Let it cook for 10 to 12 minutes on medium heat. Add the chopped dill, dried parsley and diced pineapple half way.
Makes 4 portions. Can be served over rice or beside polenta.
