Creamy Cauliflower Soup

4 T unsalted butter1 leek, white part only, chopped1/4 C flour1 medium caulifloewer, chopped into bite-sized pieces1 medium potato, diced4 C chicken broth2 C fat free half & half1 T fresh sage, chopped, or 1 t dried sagesalt & pepper to taste
Heat butter in large pan over medium-low heat; add chopped leeks. When leeks soften, add flour and still until well combined. Add cauliflower, potato and broth; bring to a boil. Turn down to simmer for 15-20 minutes, uncovered. Remove from heat and let cool for 5-10 minutes. Puree in food processor or with stick blender. Stir in half & half and sage. Cook on a low simmer until heated through, about 10 m inutes.
