Cindy's Black Beans, Sausage, and Rice

Ingredients
3 C uncooked rice6 C water1 can petite diced tomatoes2 cans black beans1/2 C green pepper, diced1 onion diced1 Link smoked sausage, sliced1 1/2 T olive oil2 packets Sazon Goya con Azafran1 T garlic powdersalt and pepper to taste
Directions
Saute onion and green pepper in olive oil until tender in a large stock pot. Add remaining ingredients and set on high until mixture comes to a boil. Immediately turn down to med.-low and simmer until rice is cooked.

    Everyone in my enjoyed this meal, even my 2 year old daughter ate it all. It seemed a little light on the seasoning; however, I may not have added enough salt an pepper. - 3/2/08
