egg white spaetzle

Ingredients
1 cup all purpose flour1 large egg2 egg whites1/4 cup skim milk
Directions
Mix flour, egg whites, whole egg, and milk together. Stir until combined. Place in refrigerator for at least one hour to allow the dough to rest.
Meanwhile, bring 1 qt of water to a boil. Add salt to taste. Pour spaetzle dough into colander, and hold over boiling water. Press dough through the colander holes with a spoon. When the spaetzle floats to the top of the water, it is done.
