2/3 c. applesauce1.5 c. brown sugar1/4 cup dark molasses2 cups yellow squash puree*2 large eggs1 teaspoon salt3 teaspoons ground cinnamon2 teaspoon apple pie spice1 teaspoon ground ginger1/2 teaspoon ground cloves2 1/2 cups brown rice flour1 teaspoon baking soda1 teaspoon baking powder2 cups steel cut oats, cooked1 cup unsweetened flaked coconut1 cup raisins1 cup chopped walnuts1/2 c. dried sweetened cranberries
Make oatmeal and squash puree first. Oatmeal can cook while you fix the rest of the ingredients.
Mix (with a mixer) applesauce, brown sugar, molasses, squash puree, eggs and spices. Blend in the brown rice flour. Add all the chunky foods together and mix with a wooden spoon. Drop spoonfuls of mix onto an ungreased cookie sheet. Bake for 350 degrees for 13-15 minutes.
