Veggie Cheese Omelet

1 cup fresh spinach (stems cut off)1 medium egg0.5 cup Egg Beaters (egg substitute)1 Tbsp. canola oil0.25 cup Kraft 2% shredded cheddar cheese3 cherry tomatoes, diced (optional)
Heat the canola oil on medium in a small nonstick skillet.
Lightly beat egg and egg substitute together.
Add the spinach. Stir lightly to disperse spinach evenly throughout eggs.
Pour egg mixture into skillet.
Cook until solid on the bottom.
Then, lift edges and tilt skillet slightly to allow most of the liquid left on the top to drain underneath and cook.
Flip with a spatula to cook the other side (30-60 seconds) (don't brown).
Flip back over and spread out the cheese evenly. Fold one half over to the other to form your omelet.
Serve immediately.
Serve with diced cherry tomatoes on top(optional)
