Bananas Foster Jam

1/4 cup brown sugar1 packet caramel flavoured stevia, i.e. Krisda (optional, but boosts the caramel flavour!)1/4 cup raisins1/4 cup water3 medium, very ripe bananas2 tbsp fresh lime juice1 tsp vanillaPinch salt1 tbsp dark rum
Combine brown sugar, stevia, raisins and water in a small pot and bring to a simmer. Cook until sugar dissolves.
Meanwhile, mash bananas with lime juice, vanilla and salt, then stir into syrup.
Cook, stirring often, 25 minutes, until very thick.
Stir in the rum and remove from heat.
Cool before transferring into a jar and chilling.
Serving Size: 2 tbsp servings
