Panko Breaded Tilapia Tortilla with Mango Salsa

Ingredients
5 4oz Tilapia Filet1/4 C wheat flour1/4 C Panko1 eggFlour Tortilla1 mango2 sliced diced red onion1/8 C chives1 jalepeno, diced1 lime, juiced
Directions
Dry tilapia. Dredge in flour, dip in slightly beaten egg, then dredge in panko and place in a baking dish.
Baked for 20 minutes in a 350 degree oven.

Meanwhile, cut up mango into cubes. Dice the red onion, chives, jalepeno and add to mangos. Squeeze juice from 1 lime into the salsa and mix.

When the fish is done, cut it into strips. Place strips onto the tortilla, put salsa on top and serve.
