Bison with Chard and Beans

Directions
1 can navy beans (rinsed and drained)1 can fire roasted tomatoes (with juice)1/2lb ground bison1 medium onion chopped2 cloves garlic minced1 bunch chard (mine was 1 bunch from the farmer's mkt)3/4c low sodium chicken broth2T cornstarchwater to mix the corn starch
1. Roughly chop chard, rinse, and drain
2. Dice onion
3. In large skillet, spray with pam. Add onion, garlic, and ground bison. Cook until done
4. Once cooked through, add tomatoes, chard, and chicken broth
5. Simmer for about 10 mins with lid on, until stalks of chard are tender
6. Mix cornstarch with roughly .25c of water to dissolve. Add to simmering mixture and bring to boil to thicken.
Serving Size: makes 4 servings (approx 1.5c)
