Saffron-Roasted Cauliflower

Ingredients
Saffron, 1 tspWater, 50 ml, just boiledCauliflower, raw, 1.25 head, cut into small floretsSultanas, 65 gram(s) (rehydrate by soaking in boiling water if too dry)Red onion, 1, thinly slicedOlive Oil, 3 tbsp Bay leaves, 2
Directions
Preheat oven to 400.

Put saffron in a small bowl and cover with water. Let sit while preparing other ingredients.

Combine cauliflower florets, sultanas, olive oil and bay leaves in a baking dish (wide and shallow is best... aim for a single layer). Mix well.

Pour saffron water over cauliflower mixture, and stir well. Cover baking dish with foil and bake for thirty minutes.

After thirty minutes, stir mixture, re-cover with foil and return to oven for another thirty minutes.

Remove bay leaves and serve.

Serving Size: Serves five as a side dish.
