4 boneless chicken breasts, skinless2 tablespoons fresh lemon juice2 tablespoons olive oil2 green onions, chopped2 tablespoons fresh parsley, finely chopped4 tablespoons Dijon mustard1 tablespoon black pepper1/2 teaspoon cayenne pepper
Place the chicken breasts in a broiling pan. In a medium-size bowl, combine the lemon juice, olive oil, green onions, parsley, mustard, and mix well. Spread the mixture over the chicken breasts. Broil for 10 minutes. Sprinkle both the black and cayenne peppers over the chicken and bake at 325* for 50 minutes. Serves four.
