2 tsp Olive Oil1 Medium onion, chopped4 garlic cloves, minced2 jalapeno peppers, finley chopped1/2 cup dry white wine or 1/2 cup water3 cups frozen corn5 (14 oz) cans fat free chicken broth2 (14 oz) cans diced tomatoes2 (10 3/4 oz) cans Campbells Healthy Request Cheddr cheese soup1 can blac beans8 oz bag reduced fat sharp cheddar cheese 4 TBSP reduced fat sour cream2 tsp cumin1 tsp chili powder1/4 tsp cayenne pepper
Heat Olive oil in a 4 qt. stock pot, add chopped onion, garlic, and jalapenos. Cook until soft. Add wine. Bring to a boil. Add chicken broth and cheddar cheese soup and stir. Add all other ingredients and stir. Bring to a boil, stirring occasionally. Reduce heat and simmer aprox. 35-40 minutes.
