Healthy Winers Sauce

Ingredients
1 tbsp olive oil7 red peppers, diced2 jalapeno peppers, diced20 plum tomatoes, chopped¼ tsp salt2 tbsp thyme3 tbsp oregano40 grinds SpiceDepot Garlic Pepper Seasoning4 tbsp nutritional yeast½ cup white wine½ cup dry green lentils1/3 cup boiling water
Directions
Heat olive oil in a large pot over medium heat.
Tip in peppers and stir well. Cover and cook about 10 minutes.
Reduce heat to low.
Add tomatoes and seasonings, stir.
Cover and cook 1 hour.
Add nutritional yeast and wine, stir, re-cover and cook 30 minutes.
Add lentils and boiling water, stir well.
Re-cover and simmer 45 minutes.
This freezes well.
