Glazed Turkey Meatloaf

1 tsp olive oil1 C chopped onions1 stalk chopped celery3/4 t dried thyme1/2 t dried sage1.4 lb ground turkey, 93% lean1 large granny smith apple, grated2 slices whole wheat bread, pulsed to make breadcrumbs1 egg, lightly beaten2 T chopped fresh parsley1 T Dijon mustard3/4 t salt1/2 t ground black pepperGlaze1 T brown sugar2 T ketchup1 t Dijon mustard
Preaheat oven to 350F.
Heat oil in small skillet over medium heat. Add onions and celery and saute 3 minutes until softened. Stir in thyme and sage and cool slightly.
Combine onion mixture in large bowl with turkey, bread crumbs, apple, egg, parsley, mustard, salt and pepper. Mix well and pack into greased 8x4-inch loaf pan, or form into a loaf shape on a flat pan. Brush on glaze (see below)
Bake for 30 minutes.
Glaze:
Combine glaze ingredients in small bowl and brush over top of loaf.
Serving Size: Makes 6 slices
