Chocolate Chip Coconut Cookies

Ingredients
1/2 C. (1 stick)light butter 1/2 C. splenda 1/4 C. light brown sugar 1 egg, large 1/2 t. vanilla extract 1/2 C. white wheat flour 1/2 C. AP Flour 1/2 t. baking soda 1/2 t. salt 1 C. semisweet chocolate chips 1 C. sweetened flaked coconut
Directions
Preheat the oven to 375 degrees.

In a large bowl, cream together the butter, brown sugar and splenda until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Fold in chocolate chips and coconut. Drop by rounded spoonfuls onto cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Makes about 3 dozen
