Greek Lemon Rice

Ingredients
- 1 cup long grain white rice- 2 cup chicken broth- 1/4 cup lemon juice- 1/2 cup finely chopped onions- 2 tsp chopped parsley- 2 tsp margarine (i used becel light)
Directions
- In a large saucepan (that has a lid for later), saute the onions until tender in the 2 tsp of margarine
- Add chicken broth, rice, and lemon juice and bring to a boil
- Reduce, simmer and cook covered stirring often until rice is tender, approx 15-20 mins
- Once rice is cooked, mix in parsley and fluff with a fork

    I used brown rice and some fresh oregano, otherwise I followed the recipe. A recipe and a half served three grown men, and me, and it was all gone! I made a Greek dinner consisting of kofta kebabs, veggie kebabs and this rice. it was a perfect solution to boring plain rice. Big YUM!
