Creamy Spinach Soup

Ingredients
2 1/2 oz onions chopped1 tbsp bacon fat3 oz sliced mushrooms2 cloves of garlic minced1 tsp Homestyle Chicken Stock (by Knorr) add to the chicken broth4 cups chicken broth16 oz frozen chopped spinach1 cup of water (optional)1 cup heavy cream (optional)salt and pepper to tastehot sauce (optional)
Directions
Saute onions till clear in butter and bacon drippings. Add mushrooms (covered) cook until tender, add minced garlic. Saute the mixture a couple of minutes then add chicken broth and bouillon (Homestyle Chicken Stock by Knorr) cook for 15 minutes (taste). Add spinach and any additional water as needed to get the consistency to your liking, season with salt and pepper to taste. Simmer at medium heat, covered for 15 minutes. Puree with an immersion blender and add the desired amount of heavy cream. The soup is great without the cream if your watching your calories.
