Addictive Chicken

1/2 c. All Purpose Flour1 Tb Black Pepper2 Skinless Boneless Chicken Breast Halves1/3 C. Soy Sauce (I use low sodium) 1/3 C Splenda1 Tb Crushed Garlic2 tsp. Crushed Red Pepper (or to taste)1/4 C. Olive Oil (for frying)
Heat oven to 350ø F.
Combine flour and pepper in a bowl or Ziploc bag. Cube chicken into about 1-inch pieces. Coat chicken pieces in flour mixture until fully coated.
Heat oil in frying pan until hot enough to sizzle when adding a sprinkle of flour. Add the floured chicken and brown on all sides. (Do not let it get
fully cooked, but just until it gets a nice brown crust.) Drain the pieces on a paper towel.
In a 13x9-inch baking pan, place pieces of chicken in a single layer.
In a measuring cup or small bowl, mix the soy sauce, Splenda, crushed garlic and red peppers. Stir so that it is well blended and the Splenda is mostly dissolved. This will be a bit thick; it will become a glaze and gel up during the cooking period. Pour the glaze over the chicken and mix around so all the pieces are coated. Bake for 30 minutes at 350ø F, stirring the pieces every 10 minutes to get them evenly coated with the glaze.

Oh my god, it was to die for! I made a few changes, though. For example, I used whole wheat flour, and nearly doubled the amount of chicken. I didn't double the rest, though, and there was enough glaze for it all since I made strips instead of nuggets. It tastes just like General Tsao's Chicken!! - 4/19/10

Calories WAY off! Very little oil left so there is at least a Tbls of oil per serving(140 cals rather than 93 listed) All the flour was used- which would be .25 cups instead if .06(that's 113 cals NOT 24!) And you need to specify a 4oz serving-not "2 breast halves" Only half the cals are listed! - 2/14/11
