Sour Cream Stacked Enchiladas

6 corn tortillas1 cup light sour cream1 cup shredded 2% fat cheese2 oz sliced olives2 oz diced green chiles1/4 cup diced red onion1 10 oz can green enchilada sauce
Preheat oven to 350 degrees. Mix sour cream, 3/4 of cheese, olives, green chiles, and red onion in a bowl. Pour some enchilada sauce in a casserole dish. Layer two tortillas on the bottom, making sure they are dredged on both sides in the enchilada sauce. Spread half sour cream mixture over tortillas. Repeat enchilada sauce, tortilla layer (dredged in enchilada sauce), sour cream spread. Top with last two tortillas, pour more enchilada sauce on the top, and sprinkle the remaining cheese over it. Cover with tin foil and cook for 15 minutes. Remove tin foil and cook for an additional 10 minutes. Cut into squares and serve.
