1/2 Whole wheat english muffin 1/4 cup low fat ricotta cheese1 Tbsp. powdered sugar1/3 cup canned light cherry pie filling (other fruit fillings can be substituted if desired)
Brown English muffin in toaster. While it is toasting, mix together the ricotta cheese and powdered sugar in a small bowl. Spoon onto toasted muffin and top with the pie filling. This makes a delicious low-fat, high-protein, high-fiber snack you can enjoy any time during the day.
