Stewed Zucchini & Tomatoes

Ingredients
1 medium Zucchini squashfresh sweet onion1 can diced tomatoes no salt2 cloves garlic, crushed1 stalk celery, diced1 Tbsp. Extra Virgin Olive Oil2 oz. white cooking wineItalian seasoning
Directions
Saute' onion, garlic, & celery in olive oil until garlic browns. Deglaze with white wine. Add sliced zucchini & Italian seasoning. Cook over medium low heat, stirring occasionally, until zucchini is tender. Add canned tomato & continue to simmer over low heat 20 minutes.
