Chicken Apple Salad

Ingredients
2 Tbsp. Maple Grove Sugar-free Raspberry Vinaigrette (or other fat free, sugar free dressing, or just Raspberry Vinegar)1 med. apple½ cup raisins2 med. stalks celery½ tsp coriander seeds, ground4 cups romaine lettuce2 cups chicken breasts, cooked
Directions
1. In a large bowl, mix chicken, apple, raisins and celery. Toss to combine.

2. In a small bowl, whisk together dressing and coriander, Add dressing to chicken mixture and toss again to combine.

3. Arrange lettuce on 4 individual plates and top with chicken salad.
Yields about 1 1/4 cups of chicken salad and 1 cup of lettuce per serving.
