Veggie Pho

Ingredients
In addition to the ingredients listed, I use a packet of Beef Pho dry soup mix which contains approximately 100 calories
Directions
mix water and chicken broth with dry soup mix, stir & bring to boil
chop spinach, broccoli and cauliflower add to boiling liquid cook for 3 minutes as veggies soften
add remaining ingredients cook another minute
turn off heat and allow to sit cooling uncovered on warm stovetop
serve and enjoy
