Sour Cream Dijon Chicken

Ingredients
4 boneless skinless chicken breast halves2 tablespoons (1/4 stick) butter8 ounces button mushrooms, thinly sliced1 medium onion, finely chopped1 1/4 cups canned low-salt chicken broth3/4 cup whipping cream1 1/2 tablespoons Dijon mustard
Directions
1. Season chicken with salt and pepper.
2. Melt butter in heavy large skillet over medium heat. Add chicken and sauté until just cooked through, about 4 minutes per side.
3. Transfer chicken to plate. Cover with foil to keep warm.
4. Add mushrooms and onions to skillet and sauté until onion is tender, about 7 minutes.
Add broth, sour cream and mustard to skillet. Simmer until reduced to sauce consistency, scraping up browned bits, about 15 minutes.
5. Return chicken and any accumulated juices to pan. Cook until chicken is just heated through, about 4 minutes longer.

    Sorry, but this sounded way better than it was. Too much onion, too soupy & watery (needed some kind of thickener) ... not worth a repeat. - 11/3/09
