Loreta's Eggplant Salad

Ingredients
Directions
2 medium eggplants2 green bell pepper2 yellow pepper1 red bell pepper1.5 sweet onion4.5 tsp minced garlic1 cup olive oil3/4 cup vinegar75 g of chopped black olives2 tbsp Oregano (or more if you love it)Salt to taste
1. Slice vegetables in medium strips
2. Place in a saucepan the olive oil and garlic, let it warm up
3. Place all ingredients (eggplant, peppers, olives and onions)
4. Stir and sprinkle a salt
5. Drizzle with vinegar, cover and cook for 20 minutes
6. Finally place the oregano
Stir in a little water and let dry ingredients that arose from
Serving Size: Makes 45 1/4 cup servings
