Cucumber Quinoa Salad

Ingredients
1 large English Cucumber, chopped1 bunch mint, chopped1 bunch cilantro (or parsley as desired) choppedjuice of 1 lemonjuice of 1 lime1 cup quinoa 1 Tbsp honey
Directions
rinse quinoa in fine sieve, add to boiling water
boil till 'angle wings' pop, usually 8-10 minutes
rinse cooked quinoa again in cold water
combine all ingredients
