Italian Sausage Minestrone

Ingredients
24 oz Al Fresco Italian style Chicken Sausage (2 packages)3 medium carrots, chopped3 medium celery stalks, chopped1.5 medium onions, chopped2 tbsp. minced garlic8 cups, reduced sodium chicken broth4 cups great northern beans, approx 2 cans4 cups fire roasted diced tomatoes, undrained, approx 2 cans2 bay leaves1 tbsp. Italian seasoning2 tbsp. tomato paste~~~additional ingredients optional and not included in nutritional values~ditalini pasta~parmesan cheese
Directions
Remove casings from chicken sausage and crumble in a large dutch oven. Heat through. Add chopped carrots, onion, garlic and celery and cook until veggies are softened. Then stir in broth, beans, tomatoes, bay leaves, seasoning and tomato paste. Heat to boiling, then reduce heat, cover and simmer for approx. 1/2 hour.

As an option you can add cooked ditalini pasta and parmesan cheese. (remember, these ingredients are not included in the nutritional values.)
