HCG Phase 2 - Kofte Salad

Ingredients
Directions
Kofte:14 oz or 400 grams of ground chicken.25 cup minced fresh cilantro1 Tbsp diced shallot2 garlic cloves, minced1.5 Tbsp paprika1 tablespoon ground cumin.75 teaspoons coarse kosher salt.5 teaspoon freshly ground black pepper.5 teaspoon cayenne pepper1 egg whiteSalad:6 cups of shredded romaine lettuce2 tomatoes cut into 8 wedges1 cucumber peeled seeded and slicedLemon Juice from 2 lemons4 TBS Fresh Cilantro or BasilSalt and Pepper
Kofte:
Combine ingredients and measure out into 100 gram balls. With a wet hand, cover the skewer with the meat and place on a tray. Repeat with the rest.
Grill on for about 4 minutes per side until the internal temp is 160f.
Salad:
Combine all ingredients.
Top salad with one Kofte stick.
Serving Size: Makes 4 salads
