Veggie and Rice Stir Fry

* Garlic, 2 clove * *Kikkoman Lite Soy Sauce, 2 tbsp * Corn Starch, 4 tsp * Ginger, ground, 1 tsp * Orange Juice, 8 fl oz * *Extra Light Olive Oil, 1 tbsp * Broccoli, cooked, 1 cup, chopped * Baby Carrots, raw, 4 medium * Celery, cooked, 1 cup, diced * Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) * *Brown Rice, medium grain (one cup uncooked)
Cut vegetables. Heat 2 tsp oil in heavy skillet over high heat until hot but not smoking. Add vegetables. Saute for 5 min.
Whisk together garlic, soy sauce, cornstarch, and ginger and orange juice. Add to skillet and cook until vegetables are tender. (about 5 more minutes)
Serve over rice.
