False Alarm Vegetable Chili

Ingredients
Olive Oil, 1 tbspOnions, raw, 1 medium Green Peppers (bell peppers), 1 cup, chopped*Peppers, sweet, red, fresh, 1 medium Carrots, raw, 1 large Sonic Sonic Green Chiles, 4 servingGarlic, 2 clovesLentils, 2 cupTomato Paste, .5 can (6 oz)Beans, red kidney, 2 cupBeans, pinto, 2 cupStewed Tomatoes, Canned, No salt, 3.5 CupChili powder, 4 tbsp*Cumin seed, 4 tsp1/4 tsp. crushed red-pepper flakesSalt and Pepper to taste.
Directions
In a large soup pot, heat olive oil over medium heat. Add onion, green and red peppers, carrot, green chilis,and garlic. Cook until the vegetables soften. about 5 minutes. Stir in 7 cups of water, lentils, tomato paste, kidneys, and pinto beans. Stir to blend, adding stewed tomatoes, chili powder, cumin, and crushed red-pepper flakes. Bring to a boil. Reduce heat to medium-low, cover and simmer until lentils are tender, about 45 minutes. If the chili starts to dry out, add hot water as needed. Season with salt and pepper and serve immediately.
