DOUGH4 cups Semolina Flour, unenriched1 tsp Salt4 Eggs1/4 cup Cold WaterFILLING1 tbsp Butter, salted1 tbsp Garlic, minced (appx. 1 - 2 cloves)1 pound Ground beef1/4 tsp Black Pepper, freshly ground1 tsp Basil1/2 tsp Marjoram, dried1 Egg1 tsp Rosemary, freshly chopped1/4 cup Milk, 2%1/4 cup Bread crumbs, dry, grated, plain4 tbsp Parmesan Cheese, freshly shredded2 tbsp Parsley, freshly chopped4 cups Spaghetti Sauce (your choice)
Make the Dough, cut out 4" circles of the dough and stuff them with the filling.
