Low Fat Pumpkin Bars with Cream Cheese Frosting

Ingredients
Bars:2 eggs 1 2/3 cups granulated sugar 1/2 cup vegetable oil 1/2 cup applesauce15-ounce can pumpkin 2 cups sifted all-purpose flour 2 teaspoons baking powder 2 teaspoons ground cinnamon 1 teaspoon salt 1 teaspoon baking soda Fosting:1/2 cup butter2 cups powdered sugar3 oz. cream cheese1 tsp. vanilla extract
Directions
For Bars:
Beat wet ingredients together
Mix in dry until just incorporated
Bake @ 350 in ungreased glass baking pans for 20-30 min or until toothpick test is clean

For Frosting:
Beat butter and cream cheese, add vanilla and mix
Beat in powdered sugar and frost on completely cooled cakes.

Serving Size: Makes 1 - 9x13 sheet cake, serves 32, AND 1 - 9x9 sheet cake, serves 16
