Tomato Spinach Soup

Ingredients
1 T olive oil1 large shallot, finely chopped2 cloves garlic, chopped1 (28) ounce can diced tomatoes in juice1 (28 ounce) cann crushed tomatoes2 cups vegetable stock1 to 1/2 ten ounce sack washed spinachsalt and pepper to your taste
Directions
Saute shallott and garlic in small amount of olive oil.
Add canned tomatoes and vegetable broth
trim stems from spinach and shredd with knife
Stir in spinach and add salt and pepper to your liking
