Green Pepper Quesidilla

Ingredients
1 TBSP Extra Virgin Olive Oil 2 Whole Wheat Tortillas 2 Green Peppers 1/2 Cup 2% Mexican Shredded Cheese 4 Tbsps. Scallions
Directions
Preheat Broiler, Place Peppers on Sheet pan, Place under broiler turning every 5 minutes until all 4 sides are charred. Place Pepper in a bowl covered with plastic wrap for 5 mins. Chop Scallions, Put Olive Oil in a frying pan and let heat up. Peal skin off of outside of Pepper, remove stem and inside seeds, and Chop into small pieces. Put tortilla into olive oil let cook on one side. Place Peppers, Scallions, and Cheese on one side of tortilla, Fold over, Flip a couple times until Tortillas outside is nice and crispy.

Serve with Fat Free Sour cream, and Salsa
