Chicken Bake

Ingredients
4 oz Mozzarella Cheese, part skim milk5 4oz boneless, skinless chicken breast1 cup, chopped Onions1 clove Garlic2 cups Spaghetti Sauce1 cup Mushrooms, fresh sliced1 cup sweet peppers sliced (mix of red, green and yellow is nice)Mrs. Dash (R) Garlic & Herb Seasoning Blend to tasteOregano or thyme to tastePepper
Directions
Poach chicken breasts in water or a little chicken broth. Spray casserole dish with a little oil (I use Pampered Chef Spritzer - healthier than nonstick spray) Place chicken breasts in dish. Cover with 1/2 cup onions, garlic and spaghetti sauce. Top with mushrooms and peppers and rest of onions. Season and sprinkle with grated cheese. Bake for 20 mins.
