1/3 cup of egg-whites (egg beaters)0.5 oz of part-skim mozzarella1/4 cup of portobello mushrooms, sliced or chopped1/8 cup of onions, chopped1/8 cup of bell pepper, chopped3 slices of turkey pepperoniPizza sauce (store bought or home made)
Saute onions, mushrooms and peppers in non-stick pan, remove
Add egg whites to non-stick pan over medium heat, let cook for 30 seconds
Add cheese to one side
Add pepperoni to the other
Add cooked vegetables
Shake pan handle to loosen omelet from pan
Serve on to a plate, folding over
Top with warmed pizza sauce
