High-Protein, High-Fiber Omelette

Ingredients
3 large egg whites1/4 can cut baby corn, well-drained1/2 cup artichoke quarters, well-drained1/4 cup part-skim mozzarella, shreddedTip: Rinse vegetables to reduce sodium, making sure to squeeze out the water
Directions
Heat greased skillet to medium heat. Pour in egg whites, spread around pan. Immediately add vegetables, cover pan. Cook until eggs are cooked through. Add cheese, cover pan, turn off heat and allow cheese to melt slightly. Fold omelette and serve.
