Quinoa Mac n Cheese

1 tsp olive oil1.5 cup quinoa, rinsed & drained12 (approx) cherry tomatoes diced1/3 C diced onion1 C milk3 C water1.5 C shredded sharp cheddar2 Eggs1 tsp minced garlicpinch of seasoning saltpinch of salt and pepper
Rinse & drain quinoa.
Saute onion, garlic & tomatoes.
Add quinoa. Brown for 5 minutes, until quinoa is opaque.
Add water. Bring to boil. Cover & simmer for 10 min or until water is almost all absorbed. Set aside for 5 minutes - away from heat.
Beat eggs & milk together. Add cheese to egg mixture. Gradually stir in quinoa mixture. Mix well. Pour into greased 9x13. Bake uncovered for 35 minutes @ 350 degrees. Top with scallions or any veggie, salsa, etc.

This was delicious; thank you! It was my 1st try with quinoa, too, so this was a great introduction. The only things I did differently were to cook the quinoa separately and then mix the sauteed veggies and milk/egg mixture into it, and I also added spinach. Your measurements were perfect.
