Hail the Kale Salad

Ingredients
1 bunch Kale chopped2 Tbsp lemon juice2 Tbsp olive oil1/2 tsp dijon mustardsalt and pepper to taste1/4 cup grated parmesan1/4 cup whole grain, unseasoned, bread crumbs
Directions
Dressing: Whisk lemon juice, olive oil, mustard, salt and pepper.

Toss dressing with salad, then add parmesan and bread crumbs and toss again.

Serving Size: Makes 4, 2 1/2 cup servings
