Gazpacho

Ingredients
Red Ripe Tomatoes, 6 medium whole (2-3/5" dia) (remove)Cucumber (peeled), 1 medium (remove)Green Peppers (bell peppers), 1 cup, chopped (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)Garlic, 2 clove (remove)Serrano Peppers, 1 pepper (remove)White Bread, 1 slice (remove)Olive Oil, 0.5 cup (remove)Cider Vinegar, 2 tbsp (remove)Basil, 2 tbsp (remove)
Directions
chop veg - set aside 1 cup of chopped veg, salt rest of veg in sieve, use bread t osoak up juices, blend veg, bread and any remaining juices in belndar. Add 1/4 cup oil slowly over 2 minutes (drizzle in) strain and repeat with outher 1/4 cup oil. stir in vinegar, basil, reserved chopped veg, season with salt. cover and refrigerate at least 2 hours to overnight.
