Single Serving Microwave Brownie

Ingredients
2T Whole Wheat Pastry Flour2T Unsweetened Cocoa1/4 tsp. baking powder3 pkts. Nu-Stevia1T coconut oil, melted1 T egg whites1/2 tsp. vanilla 1 T. warm water
Directions
Combine the dry ingredients in a mug or small bowl. Melt the coconut oil in a separate ramekin. Add egg white and vanilla and oil to the dry ingredients, and mix well. The batter was stiff, so I stirred in about 1 Tbsp. of warm water. Use the remaining oil in the ramekin to coat the inside well. Bake in microwave 30-40 seconds. If you prefer cake-like brownie, cook 60 seconds.

Microwave for 30-40 seconds, and enjoy!
